The acetaia
Serra M & D was founded in 1990 thanks to the passion of its founder, Marco Serra, a member of the “Guild of Traditional Balsamic Vinegar of Modena DOP” in Spilamberto.
In this acetaia, where the quality of the wood of the old barrels and the noble grape varieties have been carefully selected in order to obtain a unique traditional balsamic vinegar, a past is wafting, made of slow movements and attentive care, an ancient wisdom typical of this lands that here lives and has been handed down.
Balsamic vinegar is indeed one of the fine products traditionally kept in our territories, in the attics of our homes in order to draw off the little you need in the kitchen to enrich a fillet , or strawberries or a vanilla ice cream or as a digestive or on Parmigiano Reggiano , or when you simply want to enjoy something “sweet and sour taste”, pleasant and inimitable.
The acetaia is entirely family-run, so much that the family name “Serra” and the initials of Marco (father) and Daniele (son) compose its name. The accurate processing is followed at every stage by the two until the bottling.
As tradition dictates, at the birth of new members in the family, a barrel is dedicated to them, so there are now in the acetaia a barrel for Sara and a barrel for Matteo, the newest members of the family!
And of course, speaking of curiosities, you can not avoid to mention the original idea of Marco that became the most distinguishing feature between the various existing acetaias : acetaia Serra is in fact entirely decorated with frescoes painted by a local artist who, year after year, brought on the walls the visions of the founder (the details of the paintings are in the gallery of images).
On the walls all stages of processing are present: from the local vineyards to the small bottles containing the precious product, balsamic vinegar, result of many years of work and care; all is presented with humor and joviality typical of this area as shown by the ceiling, where some angels are watching the visitor with bunches in their hands.
On a wall the emblem of the acetaia has also been painted, that had been chosen by Marco to create a combination with another of his strong passions; the one for Harley Davidson motors!
